Gluten free Bread – contains eggs – Barb Mindell

1 cup Cold water ¾ cup Hot water 1 tsp Vinegar 2 Tbsp Olive oil 2 Tbsp Honey 3 Eggs 2 cup Rice flour 1 cup Tapioca flour 1 cup Chickpea flour 2 tsp Yeast 1 tsp Salt 2 tsp Xantham gum 2 handfuls Sunflower seeds 1 handful Flax seeds Add all ingredients to a bread maker according to manufacturers instructions Bake 350° for 35-40 min.  Cover once bread is brown with foil to prevent burning.

These are ideas that I’ve used and have worked. 1 Tbsp flax ground 3 Tbsp water 1 Tbsp flax ground 2 Tbsp apple sauce 1 ½ Tbsp water 1 Tbsp chia ground (or 1 ½ whole) 3 Tbsp water 1 banana mashed ** I usually add extra of the above to get things to stick nicely…  so if a recipe calls for water for example – I’ll add a bit of applesauce instead of water in a 2:1 ratio-ish ☺ **

– this was my go to at Christmas when the world of gluttony around me was just too tempting to say ‘no’… so I made my own hypoallergenic version. Turtles 1 pecan ¼- ½ tsp honey ½ apricot Melt Dark chocolate with 1tsp – 1 Tbsp coconut oil only if necessary Place dollop of honey on pecan and press apricot onto honey.  Place on parchment paper covered cookie sheet and place in freezer for 1 hour.  Melt chocolate in double broiler (over boiling water).  Roll the frozen globs in chocolate and return to sheet and freezer immediately.   Store in freezer until served....

Chocolate Chip Cookies

Dry: ½ cup Tapioca flour 2/3 cup Brown rice flour ½ cup Chocolate chips (camino dairy free or equivalent) ½ tsp Baking soda Wet: 3 Tbsp Brown sugar 1 tsp Vanilla 2 Tbsp Grapeseed oil 4 Tbsp Milk alternative Mix wet ingredients, then dry.  Combine and do not over mix.  Bake at 375° for about 7 min.  Remove from oven and allow to continue baking on cookie sheet – remove after 5 min.

½ cup cashew butter ½ cup sugar ¾ tsp baking soda 2 Tbsp Chia seeds 4 Tbsp Water Mix chia seeds and water – let sit until gelatinous.  Add cashew butter and sugar until will combined…. Dust baking soda and mix into dough.  Chill in fridge for 45 min.  Drop onto parchment paper (well spaced out) and cook for 12  min at 375° until golden...
