Turkey Picadillo – one pot

This was delicicious, even my 2 year old loved it (I held back on some of the spice though)

Turkey Picadillo

One pot Turkey Picadillo

1 lb ground free range turkey

1 onion- chopped finely

1 kolrabi, peeled and chopped

3 large garlic cloves chopped

1 large carrot chopped

1 1/2 peppers chopped

1 sweet potato chopped

3 button mushrooms chopped

1 jalapeno or other hot pepper diced

1/4 apple cider vinegar

2 tsp oregano (dried)

1/2 tsp dried chili

2 tsp paprika

1 tsp cumin

3 tbsp tomato paste (I use frozen tomatoes from our garden instead)

1/4 cup capers

1/4 cup olives (stuffed green)

1/2 raisins or chopped dried apricots

1 can black beans

1/2 frozen peas

Saute ground meet, drain fat if necessary (shouldn’t be with true free-range beast).  Add all veggies and saute for 5 min, return ground meet, add spices, capers, olives, black beans and raisins.  Simmer for 30ish min.  Add peas at end and let sit for 10 min prior to serving.

Serve on wild/dark/short-grain brown rice or my favourite – on a bed of greens as a ‘warm’ salad.
