Choco Energy balls

School Friendly

You can adjust this recipe any multitude of ways to your own tastes and school restrictions.

1/2 cup sunflower seed butter

1/8 cup agave syrup/or maple or honey

1 tsp cocoa/or carob powder

1/4 cup coconut flakes

1/4 cup cocoa nibs/chocolate chips

1/4 cup raisins or dates or cranberries or prunes

1/8 cup hemp seeds

1/8 cup pumpkin seeds or sunflower or sesame (nuts if not for school)

Mix together sunflower butter, syrup and cocoa powder thoroughly.  Add 1/8 cup coconut flakes, cocoa/chocolate nibs and dried fruit – Mix.  Let this sit in fridge 1-2 hours.  Roll out small balls into three separate bowls containing remainder of coconut flakes, pumpkin seeds and hemp seeds.  Return to fridge.

Store in the fridge.  Adapt as necessary.  Enjoy!
